Pumpkin Spice Oatmeal

I woke up this morning and wanted oatmeal for breakfast. My favorite is maple and brown sugar, it has been since I was a kid. Today I noticed that I still had one can of pumpkin puree up in the cabinet. I thought to myself that pumpkin spiced oatmeal sounded like a great idea. I googled it, and came up with this recipe. This recipe makes you think you are eating pumpkin pie for breakfast, except that this is much better for you!

Pumpkin Spice Oatmeal

1 1/2 cups milk

1 cup pumpkin puree

1 teaspoon vanilla extract

1 tablespoon pumpkin pie spice

1 cup rolled oats

2 tablespoons brown sugar

In a large saucepan, whisk together the milk, pumpkin puree, and spices and heat the mixture on medium heat. When it starts to boil, add the rolled oats and cook for 7 to 10 minutes, stirring occasionally, until the oats are soft and the liquid has been absorbed. This makes 2 servings. Top each serving with 1 tablespoon of brown sugar and serve.
