Classic Chicken Salad

If you have leftover rotisserie chicken, or chicken breasts, then this is the recipe for you. I love this chicken salad for the slight crunch of the celery, and the hint of sweetness the red grapes provide. There is a local restaurant that makes the best chicken salad sandwiches, and I believe this recipe is very close! This would be great for a wedding or baby shower, or perhaps just a weekend lunch at home.

Classic Chicken Salad

2 cups diced cooked chicken or turkey

1 cup diced celery

1 cup halved seedless red grapes

3/4 cup real mayo

salt and pepper to taste

Combine the chicken, celery, and red grapes in a medium-sized mixing bowl. Fold in the mayo, and mix well. Season to taste with salt and pepper. Serve on a bed of fresh lettuce leaves or on sandwich bread.
