I love pasta salad, and I thought this recipe was delicious! I made it up a day ahead, and it tasted wonderful. I can’t wait to make it again this summer with fresh veggies from our garden.
Pepperoni Pasta Salad

16 oz package pasta, I used mini penne
1 small can olives, drained
3 large carrots, chopped
1 small head of broccoli, chopped
1 bunch of green onions, diced
2 tomatoes, diced
3/4 cup pepperoni, diced
1/2 cup grated parmesan cheese
1/2 bottle zesty Italian dressing
Boil pasta noodles and rinse with cold water, set aside. In a large bowl, combine all ingredients except for the Italian dressing. Refrigerate for at least an hour, I refrigerated mine overnight. Right before serving, toss with 1/2 bottle of zesty Italian dressing.
