Shrimp Tacos with Jalapeno Ranch Sauce

As soon as I saw these on A Taste of Home Cooking, I knew I needed to make them soon! They were absolutely delicious, and a snap to make. I can see this recipe becoming a summer time regular around here. I grilled the shrimp as recommended and they were so tasty! I couldn’t belive how flavorful the marinade made the shrimp in just 30 minutes. I can’t wait to make these again soon! This recipe fed 3 adults, when I make it again I would probably double it.

Shrimp Tacos with Jalapeno Ranch Sauce

1 pound shrimp, peeled and deveined

olive oil

juice of half a lime

chopped garlic or garlic powder

chili powder or cayenne powder

1 can chopped green chilies or 1 jalapeno, roasted, peeled and seeded

1 packet ranch dressing mix

1 cup sour cream

flour tortillas

shredded lettuce

diced tomatoes

shredded cheese

Combine the shrimp with the first 7 ingredients, and let marinate for no longer than 30 minutes. Grill shrimp on a charcoal grill.

Meanwhile, combine the green chilies and or jalapeno pepper with the sour cream and ranch dressing. Using a food processor, blend until smooth. Warm the tortillas

Assemble by smearing some of the ranch sauce on a tortilla and topping with the shrimp, lettuce, cheese, and tomatoes. Drizzle with extra sauce and top with hot sauce if desired.
